We're hiring for our December opening in Costa Mesa.

Old Millby Stara

A dining room built in the spirit of the mills that once ground rye for every village in Poland. Opening December 2026 in Costa Mesa.

From a market stall to a mill.

Stara started as a Polish immigrant family's stand at the Original Farmers Market, then grew to a counter in Venice Beach — the same recipes, the same family, one town at a time.

Old Mill is where that story finally gets the room it always needed: a full dining room, built the way the mills back home were built, for the meals that were always worth sitting down for.

Ground, risen, and fired the way it was done before anyone called it fine dining.

A window onto the old country.

The dining room is built the way a Polish country house is built — timber beams overhead, plaster walls, and windows framed in reclaimed wood. Look through one and you're looking out on a farm in Poland: the view is a screen set behind an old-world frame, and it shifts with the season.

  • StructureReclaimed timber framing, exposed beams, hand-plastered walls
  • WindowsWood-framed screens looking out on the Polish countryside
  • TablesHeavy, mill-table proportions — built to be shared
  • LightLow and warm, from iron sconces and the glow of the windows
